Boil rice until tender then drain and set aside
Heat sunflower oil in a large pan and brown chicken
Add onion, KNORR Chicken Stock Pot, Honey, Dijon Mustard, water, peanut butter and soy, cover and simmer for 10 minutes
Add beans and red pepper. Cover and allow to simmer for another 5 minutes
Serve over cooked rice and sprinkle with spring onions
