The fresh and tasty option for a healthy breakfast elevated by Aromat. 
Ingredients
  • 2 large eggs, hard-boiled and chopped
  • 1/4 cup (62g) cucumber, diced
  • 1/4 cup (62g) cherry tomatoes, halved
  • 1/4 cup (62g) Kalamata olives, sliced
  • 1/4 cup (62g) red onion, finely diced
  • 2 tablespoons (30ml) feta cheese, crumbled
  • 2 tablespoons (30ml) fresh parsley, chopped
  • 1 tablespoon (15ml) lemon juice
  • 1 tablespoon (15ml) extra virgin olive oil
  • 1/2 teaspoon (2,5ml) dried oregano
  • 1 teaspoon (5ml) Aromat seasoning (or taste)
  • Optional: 1 tablespoon capers, drained
Cooking Method
  1. In a mixing bowl, combine the chopped hard-boiled eggs, diced cucumber, halved cherry tomatoes, sliced Kalamata olives, finely diced red onion, crumbled feta cheese, and chopped parsley.

  2. In a small bowl, whisk together the lemon juice, extra virgin olive oil, dried oregano, and Aromat Original seasoning to make the dressing.

  3. Pour the dressing over the egg and vegetable mixture in the mixing bowl.

  4. Optional: Add drained capers for an extra burst of flavor.

  5. Gently toss all the ingredients together until well combined and evenly coated with the dressing.

  6. Taste and adjust seasoning with more Aromat, lemon juice, or black pepper if needed.

  7. Transfer the Mediterranean egg salad to a serving bowl or plate.

  8. Garnish with additional chopped parsley or crumbled feta cheese if desired.

  9. Serve immediately, or cover and refrigerate for at least 30 minutes to allow the flavors to meld together before serving.
