Egg and Avocado Wrap (using high-fibre wraps)

Egg and Avocado nicely wrapped with high fibre wraps and filled with fresh avo and fried veggies with cherry tomatoes on the side seasoned with your Aromat. 
Ingredients
  • 2 High-fibre wraps (these are great for extra fibre)
  • 4 large eggs
  • 1 medium ripe avocado
  • 8 - 10 halved cherry tomatoes
  • 250 g (1 cup) fresh spinach leaves, 1/4 cup thinly sliced red onion
  • 15 ml (1 tbsp) lemon juice
  • pinch of Aromat Original seasoning to taste
  • 15 ml (1 tbsp) olive oil
Cooking Method

Prepare the Ingredients:

  1. Mash the Avocado: Halve the avocado, scoop out the flesh into a bowl, and mash it with a fork until smooth. Stir in the lemon juice and season with Aromat Original Seasoning to taste.

  2. Halve the Cherry Tomatoes: Cut them in half.

  3. Slice the Red Onion: Thinly slice the red onion.

Cook the Eggs:

  1. Whisk the Eggs: Crack the eggs into a bowl and add a pinch of Aromat Original Seasoning. Whisk until mixed well.

  2. Heat the Oil: Put 1 tablespoon of olive oil in a non-stick pan over medium heat.

  3. Scramble the Eggs: Pour the eggs into the pan and cook, stirring gently, until they are just set. Remove from heat.

Assemble the Wraps:

  1. Lay Out the Wraps: Place the high-fiber wraps flat on a clean surface.

  2. Spread Avocado: Divide the mashed avocado mixture between the two wraps and spread it evenly.

  3. Add the Eggs: Spoon the scrambled eggs over the avocado.

  4. Layer the Veggies: Add a layer of fresh spinach leaves, cherry tomato halves, and red onion slices.

Roll the Wraps:

  1. Fold and Roll: Fold in the sides of each wrap and roll them up tightly from the bottom. Slice each wrap in half diagonally for easier handling and serving.

Serve:

  1. Enjoy your wraps immediately with a side of hot sauce or salsa if you like.
