Form Nuggets: Scoop out portions of the mixture and shape them into small nuggets using your hands. Place the nuggets on the prepared baking sheet.
Bake: Bake the veggie nuggets in the preheated oven for 15-20 minutes, or until golden brown and crispy. Flip halfway through the cooking time to ensure even browning.
Serve: Once the veggie nuggets are cooked through and crispy, remove them from the oven and let them cool slightly before serving.
