Ingredients
  • 250 ml (1 cup) mayonnaise
  • 30 ml (2 Tbsp) Rajah Flavourful & Mild Curry Powder
  • the juice of 1 lemon
  • 60 ml (4 Tbsp) chutney
  • salt and pepper, to taste
  • 4 corn cobs
  • 5 ripe tomatoes, cubed
  • 1 green pepper, deseeded and cubed
  • 2 sticks celery, cut into small cubes
  • half a red onion, peeled and finely chopped
  • 500 g fusilli pasta
Cooking Method
  1. In a bowl, whisk together the mayonnaise, Rajah Flavourful & Mild Curry Powder, lemon juice and chutney. Season to taste with salt and pepper and set aside.

  2. Pull the husks away from the corn cobs and discard. Slice off the kernels. Place these into a large salad bowl together with all the other vegetables.

  3. Cook the pasta according to instructions on the package, then drain well and allow to cool.

  4. Mix the cooled pasta into the vegetables. Tip in the dressing and toss gently to combine.

  5. Serve with braaied meat or chicken.
