Make your favourite braai side dish a little healthier (and tastier) by inviting orange sweet potato to the party! Sweet and creamy orange sweet potatoes are loaded with vitamin C.

Tips

You can mix it up and add thinly sliced butternut instead of sweet potato (or go half, half).

Perfect for meal prep for singles or couples – make the entire, leave to cool and divide into portion sized fridge safe bowls (that seal tightly). If stored correctly it will last in the fridge for 3 days. You can freeze portions for up to 3 months.

Replace the fresh garlic with ready minced store bought garlic to save time.

Ingredients
  • 1 packet (50 g) Knorr Brown Onion Soup Powder
  • 250 ml (1 cup) cream (or milk)
  • 250 ml (1 cup) milk
  • 4 sprigs fresh thyme, removed from stems and finely chopped
  • 2 cloves garlic, finely chopped
  • 3 ml (½ tsp) ground Robertsons Nutmeg
  • 4 large (around 1 kg) orange/red sweet potatoes, scrubbed
  • 250 ml (1 cup) grated mature cheddar cheese (or cheese of your choice)
Cooking Method
  1. Preheat oven to 180°C.

  2. Heat the cream and ½ the milk together with the thyme, garlic and nutmeg then mix the Knorr Brown Onion Soup Powder with the rest of the cold milk and then whisk into the warm cream mixture.

  3. Slice the sweet potatoes super thin – about 3-5mm thick. It can be done with a knife but a mandolin works really well!

  4. Carefully layer the potatoes in an oven safe dish (about 20cm x 20cm).

  5. Pour the liquid over.

  6. Add the cheese to the top.

  7. Bake for 45 minutes to 1 hour until golden.
