Spiced Tomato Chicken and Rice Tray Bake
Chicken and rice all baked together with a good kick of spiciness

Ingredients
- 1 small onion, finely chopped
- 5 ml crushed garlic
- 30 ml margarine
- 1 cup brown rice
- 750 ml hot water
- 48 g sachet Knorr Dry Cook-In Sauce Savoury Mince mince
- Robertsons chicken spice
- 1.2 kg chicken drumsticks
- 1 large handful baby spinach
Preparation method
- Preheat oven to 180 C
- Scatter the onion and garlic on the base of an oven tray and place small knobs of margarine randomly on the base
- Pour the rice on top of the onion and spread out to make an even layer
- In a bowl mix together the water and the contents of the sachet of Knorr Dry Cook-In Sauce Savoury Mince to combine
- Pour this mixture over the rice
- Generously season the chicken drumsticks with chicken spice and arrange them on top of the rice
- Cover with tin foil and bake in the oven for 40 minutes then remove the foil and bake for a further 25 minutes or until the rice is tender
- Remove from the oven and top with baby spinach leaves and serve
