Honey Satay Chicken Stir Fry

Ingredients
- 15 ml sunflower oil
- 500 g skinless chicken breast, sliced
- 1 onion, sliced
- 1 Knorr chicken stock pot
- 45 ml honey
- 30 ml Dijon mustard
- 400 ml water
- 45 ml peanut butter
- 15 ml reduced salt soy sauce
- 1 cup green beans, sliced
- 1 red pepper, sliced
- cup spring onions, sliced
- 500 ml rice, uncooked
Preparation method
- Boil rice until tender then drain and set aside
- Heat sunflower oil in a large pan and brown chicken
- Add onion, KNORR Chicken Stock Pot, Honey, Dijon Mustard, water, peanut butter and soy, cover and simmer for 10 minutes
- Add beans and red pepper. Cover and allow to simmer for another 5 minutes
- Serve over cooked rice and sprinkle with spring onions
