Preheat your grill to medium high.
First make the whipped feta. Place all the ingredients into a food processor and blend until smooth. If you don’t have a food processer, use a fork to finely crumble the feta cheese, then stir in the remaining ingredients. Set aside.
Brush each flat bread on both sides with olive oil. Grill the flat breads on a medium-high heat, on both sides, until coloured with grill lines. Set aside.
To make the koftas, put all the ingredients in a bowl and mix well.
Divide the mixture into eight balls, then roll them out into even ‘sausages’. Carefully push a wooden skewer lengthways through each one.
Grill the koftas over a medium-high heat, turning them often, for about 5-7 minutes, or until coloured all over and cooked through.
Serve your beef koftas warm with the flat breads and whipped feta. Garnish with fresh coriander.
