Heat the oil in a large frying pan over medium heat. Add the onion and cook until soft and translucent, about 5 mins.
Add the garlic flakes, BBQ spice and sugar and cook until fragrant. Add in the gammon and cook until warmed through.
Push all the ingredients to one side of the pan and then pour the eggs over the empty side. Use a spatula to spread the eggs out evenly. Season the eggs with salt and pepper.
Once the eggs are set, use a spatula to break them apart and then mix them with the spiced gammon mixture.
Add the rice and soy sauce to the pan, mix together thoroughly. Season to taste. Turn off the stove and stir through the spring onion. Serve immediately.
