Ingredients

- 1 tbsp cooking oil
- 1 tbsp Rajah medium curry powder
- 1 tsp Robertsons barbecue sauce
- 400 g Boerewors, sliced
- 2 tomatoes, chopped
- 1.5 cups water
- 2 cups pumpkin, peeled and cubed
- 1 Knorrox beef stock cube
- 2 tsp Knorr Minestrone Soup
Preparation method

- In a pot, fry the onion in oil until soft.
- Add the Rajah Medium Curry Powder and Robertsons Barbeque Spice and fry for 1 minute to release the flavour and aroma
- Stir continuously
- Add the sliced boerewors and fry until well browned
- Add the tomatoes and fry for a further 2 minutes
- Add the pumpkin, water and Knorrox Beef Stock Cube, bring to the boil and then turn down the heat and allow it all to simmer for 20 minutes
- Just before serving mix the Knorr Minestrone Soup with 4 tablespoons of water to form a smooth paste, add it to the pot and allow it all to simmer for 5 minutes or until thickened
- Serve with rice or pap
