Perfect for meal prep for singles or couples – make the entire recipe (but don’t add the baby spinach until serving), leave to cool and divide into portion sized fridge safe bowls (that seal tightly). If stored correctly it will last in the fridge for 3 days – freeze the portions if you intend on keeping it for longer.
You can replace the thighs with chicken wings or drumsticks if you like.
Preheat oven to 180°C.
Follow the instructions on the Knorr Cook-in-Bag Sticky Chicken Wings, adding the chicken and the red onion into the bag. Prep another roasting tray by lining it with foil or baking paper.
Toss the sweet potato in the oil, season well with salt and pepper.
Carefully lay them out on the baking tray in a single layer.
Roast the potatoes as the chicken cooks – the potatoes should take 45 minutes.
To make the sauce – blend the yoghurt, Knorr Greek Salad Dressing, avocado, garlic and seasoning together. Season to taste. If you don’t have a blender – just chop all the herbs finely, mash the avo with a fork (if using) and mix everything together well.
Serve scattered with baby spinach.
