Preheat oven to 220°C.
Toss the cauliflower florets and red onion with the oil, 2 Tbsp of the Knorr Boloroni Mince Mate seasoning, smoked paprika and garlic powder.
Roast the cauliflower for 15-20 minutes or until golden.
Meanwhile, add the tomatoes and water to a large saucepan and bring to a simmer.
Then stir in the remaining Knorr Boloroni Mince Mate seasoning and the pasta.
Reduce the heat and cook for 8-12 minutes until the pasta is cooked – if it looks like it is too dry, add additional water a few Tbsps at a time.
Season to taste with pepper.
Serve bowls full of steaming pasta topped with the crispy cauliflower and a scattering of parmesan shavings.
