Initially, red cabbage was grown as food for livestock or as sustenance for the underprivileged, who couldn’t afford anything else. It wasn’t until the 18th century that red cabbage rose to popularity in the wealthier class groups.

Red cabbage is also known as purple cabbage, red kraut or blue kraut.

Nutritional Value:

The red colour comes from anthocyanin pigments in red cabbage. In ancient folklore, it was believed that anthocyanin pigments had medicinal properties with potent health benefits. Today, we know that raw red cabbage contains 11x more vitamin A than ordinary cabbage, and almost 3x more calcium than lettuce.
