Chicken Bolognese

This rich, saucy and extra tasty version will keep you coming back for more. A simple, quick sauce which is loaded with flavour to add to your pasta. 
Ingredients
  • 45 ml or 3 tbsp of oil
  • 600 g chicken fillets cubed cut into small pieces
  • 1 large onion, diced
  • 15 ml or 1 tbsp dried mixed herbs
  • 7.5 ml or 1 tsp chilli flakes
  • 5 medium tomatoes, grated
  • 15 ml or 1 tbsp tomato paste
  • 15 ml or 1 tbsp Knorrox Stock Powder - Garlic and Onion flavour (mixed according to package instructions)
  • 120 ml or 1/2 cup of water
  • 250 g frozen mixed vegetables
  • 1 cup of grated cheese
  • 500 g packet or 2 cups of spaghetti - cooked
Cooking Method
  1. In a large pot, heat oil and fry the chicken in batches until brown. Remove the chicken from the pot.

  2. In the same pot add the onions and fry until translucent. Add the dried mixed herbs, and chilli flakes and mix well.

  3. Add the grated tomatoes, tomato paste, and stock and allow to simmer for about 10 minutes until thickened.

  4. Add the frozen veg and chicken allow to cook for a further 10 minutes until the vegetables have softened.

  5. Remove from heat. Adjust seasoning if needed.

  6. Serve with spaghetti and top with grated cheese.
