In a large pot, heat oil and fry the chicken in batches until brown. Remove the chicken from the pot.
In the same pot add the onions and fry until translucent. Add the dried mixed herbs, and chilli flakes and mix well.
Add the grated tomatoes, tomato paste, and stock and allow to simmer for about 10 minutes until thickened.
Add the frozen veg and chicken allow to cook for a further 10 minutes until the vegetables have softened.
Remove from heat. Adjust seasoning if needed.
Serve with spaghetti and top with grated cheese.
