Ingredients
- 125 ml or 1/2 cup Hellmann's Original mayonnaise
- 10 ml or 2 tsp. rice wine vinegar or white Wine vinegar
- 5 ml or 1 tsp. soy sauce
- 5 ml or 1 tsp. honey
- 1.25 ml or 1/4 tsp. chopped fresh ginger
- 1 pinch salt
- 15 ml or 1 Tbsp, orange juice
- 4 boneless, skinless chicken breasts
- 6 cups torn lettuce leaves
- 1 small bunch watercress (optional)
- 113 g sugar snap peas
- 2 oranges, peeled and sectioned
Preparation method
- In small bowl, combine Hellmann's Original Mayonnaise, vinegar, soy sauce, honey, ginger and salt.
- Reserve 1/4 cup mayonnaise mixture for grilling.
- Stir orange juice into remaining mayonnaise mixture; reserve for greens.
- Under a hot grill, grill the chicken, brushing with reserved 1/4 cup mayonnaise mixture, 12 minutes or until chicken is thoroughly cooked, turning to prevent burning.
- In large bowl, toss lettuce and watercress with reserved orange juice mixture.
- To serve, arrange sliced chicken over greens, then top with sugar snap peas and oranges.
