Rainbow Bean and Feta Buddha Bowl
Make eating well a breeze with this healthy and super satisfying Buddha Bowl.
- 1/2 tin of chickpeas
- 1/2 tin of black beans
- 1/2 tin of lentils
- 1 small tin of small kernel corn
- A handful of crumbled feta cheese
- 1 large red onion, diced
- freshly ground black peppercorns
- 2 teaspoons Hellmann's Original mayonnaise
- 3 tablespoons grated beetroot
- 1 sliced peppadew pepper
- 1 handful chopped coriander
- Drain chickpeas, black beans, lentils and corn and place in large mixing bowl.
- Add diced red onion, feta, grated beetroot, sliced peppadew, and coriander to bowl.
- Combine all the ingredients together with Hellmann’s Original Mayonnaise and season with Robertsons Atlantic Salt and Robertsons Black Pepper.
