Peri-Peri, Cheese and Potato Fritter
Robertsons Peri Peri livens up the flavour in these mouth-watering, cheesy potato fritters with crunchy corn and creamy avocado. Enjoy them at breakfast, brunch or as a light lunch.

Ingredients
- For the Potato Cake:
- 2 medium potatoes, grated
- ½ medium Sized onion, grated
- 15 ml or 1 Tbsp Robertsons Peri Peri
- 125 ml or ½ Cup Breadcrumbs
- 1 Large egg
- 125 ml or ½ Cup Mature Cheddar Cheese, Grated
- 2.5 ml or ½ Tsp Salt
- 250 ml or 1 Cup Cooking Oil (for pan frying)
- Toppings:
- 60 ml or ¼ Cup Crème Fraiche
- 125 ml or ½ Cup Charred Sweet Corn Kernels
- ½ a Hass Avocado
- 3 - 5 Rashes of Crispy Streaky Bacon
- 4 sprigs of fresh coriander
- 2 Fresh Lime Wedges
Preparation method
- Place the grated onion & potato into a colander lined with paper towel. Squeeze it to get as much moisture as possible out.
- Place the grated potato & onion into a bowl with the Robertsons Per-Peri, breadcrumbs, egg, cheese & salt. Mix together thoroughly.
- Get a non-stick or cast iron skillet onto the stove at a high heat.
- When the oil is hot shape the latkes by hand & fry until golden and crispy on both sides.Remove from the pan and onto paper towel to drain off excess oil.
- Top with crème fraiche, crispy bacon, charred sweet corn, sliced avocado, coriander & a squeeze of fresh lime.
