Hot and Herby Potatoes
Delicious with chicken, red meat or fish, these potato treats are sure to become a family favourite.

Ingredients
- 2 Medium baking potatoes
- Olive oil
- 60 gram Cream cheese
- 30 millilitre KNORR Peri-Peri Sauce
- 15 millilitre Snipped chives
- 1 pinch Robertsons Salt
- 1 pinch Robertsons Dried Basil
- 1 dash Robertsons Cayenne Pepper
- 45 millilitre Milk
- 15 millilitre Stork margarine, melted
- 1 Round feta cheese
- Assorted fresh herbs to garnish
Instructions
- Brush potatoes with oil and wrap in foil.
- Place in a preheated 180°C oven and bake for 1 hour or until cooked. Remove from oven and cool for 10 minutes.
- Cut potatoes in half.
- Scoop out flesh, leaving a thin shell.
- In a bowl mash the potato flesh with cream cheese, KNORR Peri-Peri Sauce, chives, salt, basil and cayenne pepper.
- Add milk and margarine, mix until smooth.
- Spoon mixture into potato skins. Place on a baking sheet, crumble feta cheese over potatoes.
- Bake at 180°C for 15-20 minutes or until heated through.
