Gammon, Caramelised Onion And Cranberry Quiche

A delicious, quick and easy recipe to use up your left-over gammon from Christmas day!

  • For the pastry:
  • 300 ml cheddar cheese, grated
  • 250 ml cake flour
  • 125 g margarine, cubed
  • For the filling:
  • 15 ml sunflower oil
  • 1 onion, sliced
  • 1 cup cooked, shredded gammon
  • ¼ cup dried cranberries
  • 2 extra large eggs
  • 125 ml milk
  • 125 ml cream
  • 1 sachet KNORR Roasted Vegetables Veggie Bake


  • Preheat oven to 180°C
  • To prepare the pastry mix the cheddar cheese, flour and margarine together in bowl using your fingertips until a soft dough forms
  • Press the dough into an oven proof pie dish and allow to rest in the fridge while you prepare the filling
  • Heat oil in a frying pan and fry the onion until soft and caramelised then allow to cool slightly
  • Arrange the caramelised onion, gammon and cranberries on top of the quiche crust
  • In a bowl whisk together the eggs, cream, milk and contents of the sachet of KNORR Roasted Vegetables Veggie Bake until combined then pour over the filling
  • Bake in the oven for 35 minutes or until the filling has set and the crust has baked through
  • Serve with salad
