Ingredients

  • 30 ml oil
  • 1 onion, chopped in cubes
  • 1 clove garlic crushed
  • 1 red pepper, cut in cubes
  • 1 yellow pepper cut in cubes
  • 1 brinjal, cut in cubes
  • 1 KNORR Vegetable Stock Pot
  • 240 g tomatoes, cubed
  • 3 baby marrow, cut in cubes
  • Pinch of thyme
  • 3 ml ground black pepper

Method

  • Heat the oil and fry the onion and garlic until soft
  • Add the red and yellow peppers and fry for 5 minutes
  • Add the cubed brinjal, fry for 2 minutes, then add the KNORR Vegetable Stock Pot ensuring that the brinjal is well coated and simmer on a low heat for 10 minutes
  • Add the tomatoes and fry for 5 minutes
  • Lastly add the baby marrow, thyme and pepper and simmer until the marrow is cooked
