A delicious and nutritious beetroot soup recipe that is simple to make and ideal for hot summer evenings – simply simmer, blend and enjoy!

  • 30ml sunflower oil
  • 1 onion, finely diced
  • 2 large cloves crushed garlic
  • 4 medium beetroot, peeled and cubed
  • 2 carrots, peeled and sliced
  • 1 KNORR Vegetable Stock Pot
  • 750ml water


  • Heat oil in a saucepan and cook the onion and garlic over a medium heat until soft
  • Stir in the chopped beetroot and carrots and cook for 5 minutes
  • Add the KNORR Vegetable Stock Pot and water, bring to the boil then reduce the heat and simmer covered for 30 minutes or until the beetroot is tender
  • Remove from the heat and blend until smooth using a hand blender or food processor
  • Serve garnished with chopped chives and a swirl of cream
