Delicious Chicken Casserole

You can't go wrong with a wholesome, well seasoned chicken casserole as a week night meal - enjoy!

Serves 4 | Preparation Time: 10 mins | Cooking Time: 90 mins

Ingredients

  • 25 millilitre Oil
  • 2 Onions, chopped
  • 2 Garlic cloves, crushed
  • Carrots, finely diced
  • 1 kilogram chicken pieces
  • Robertsons Freshly Ground Salt and Pepper to taste
  • 1 KNORR Beef and Tomato Packet Soup
  • 125 millilitre Water
  • 50 millilitre Sherry
  • 15 millilitre Honey
  • 25 millilitre Worcester sauce
  • 125 millilitre Chopped parsley
  • 15 millilitre Brown vinegar
  • 5 millilitre English mustard
  • 5 millilitre Robertsons Dried Origanum
  • Sour cream to serve

Instructions

  1. Heat oil in a large pan.
  2. Sautè onions, garlic and carrots and place in a large casserole dish.
  3. Using the same frying pan, brown the chicken lightly on both sides and arrange on top of vegetables and season lightly.
  4. Add remaining ingredients to the pan except the sour cream and mix well.
  5. Pour over the chicken, cover and bake at 160°C for 1 hour 30 mins.
  6. Just before serving add sour cream and stir through.
  7. Sprinkle with chopped chives and a side serving of vegetables.
