Bacon & Corn Hash Browns - USA

Try hash browns with a twist - just in time for the World Cup.

Serves 4 | Preparation Time: 10 mins | Cooking Time: 20 mins

Ingredients

  • 2 tablespoon Vegetable oil
  • 3 Rashers shoulder bacon, chopped
  • 1 Onion, chopped
  • 1 Green pepper, seeded and chopped
  • 2 Large potatoes, peeled and grated
  • 125 millilitre Frozen corn, thawed
  • 1 pinch Robertsons Paprika
  • 2 Eggs, lightly beaten
  • 1 KNORR Creamy Garlic Packet Sauce
  • Robertsons Salt and Freshly Ground Black Pepper to taste
  • Fresh flat-leaf parsley to garnish

Instructions

  1. In a frying pan heat 1 tablespoon of oil.
  2. Fry bacon until crisp.
  3. Remove and set aside.
  4. Add onion and green pepper to pan, cook for 5 minutes until soft.
  5. Add to bacon.
  6. In a large bowl mix together all ingredients except parsley.
  7. Grease a frying pan lightly with oil.
  8. Add ¼ cupfuls of mixture into pan and cook until golden brown and crispy on the bottom.
  9. Turn over and cook the other side.
  10. Stack and serve garnished with parsley.
