Mixed Mushroom Stroganoff

Ingredients

  • • 1 tablespoon (15 ml) oil
  • • 1 clove garlic, crushed
  • • 2/5 cup (100 ml) red wine
  • • 1 packet KNORR Fresh Ideas Beef Stroganoff Cook-In-Sauce
  • • 4 cups cooked brown rice to serve
  • • finely chopped parsley
  • • 4 spring onions, chopped
  • • 500 g assorted mushrooms, sliced thickly
  • • ½ teaspoon (2,5 ml) paprika
  • • Robertsons Salt and Pepper to taste
  • • 3/5 cup (150 ml) sour cream

Instructions

  1. In a large frying pan heat the oil
  2. Add spring onions and garlic, sauté over medium heat until the onions are soft
  3. Add the mushrooms and cook just until they start to soften
  4. Pour in the red wine and simmer
  5. Add KNORR Fresh Ideas Beef Stroganoff Cook In Sauce packet contents, milk and water as per packet instructions, and bring to the boil
  6. Reduce heat and simmer for 10 minutes until the sauce begins to thicken
  7. Season to taste
  8. Spoon 1 cup brown rice into each serving bowl
  9. Spoon mushroom stroganoff over and top with a blob of sour cream and sprinkle with parsley
