Ingredients

  • • Vegetable oil, to shallow-fry
  • • 1 sachet KNORR Fresh Ideas Mild Durban Curry
  • • 500g chicken, cut into strips
  • • 250 ml mange tout
  • • 250 ml sprouts for garnish
  • • 6 small poppadums
  • • 400ml water
  • • Bunch spring onion, sliced
  • • 125 ml coriander, roughly chopped

Instructions

  1. Cut poppadums into quarters using scissors Heat enough oil in a small frying pan over high heat to reach 1cm
  2. Add poppadums, one at a time, and cook until puffed and a light golden colour
  3. Transfer to a plate lined with paper towel
  4. Brown chicken strips in a frying pan and then add the powder of a sachet of Knorr Mild Durban curry and 400ml water and cook for 20-25 minutes
  5. When cooked, add spring onion, and mange tout
  6. Layer chicken curry and poppadums using 4 quarters of a poppadums per serving
  7. Garnish with sprouts and serve
