Beef Sausage & Brinjal Stew
Brinjals and beef, combined with onion and tomato flavour, make this stew a family favourite.

Ingredients
- • 1 brinjal, cut into cubes
- • 1 large onion, chopped
- • 1 sachet KNORR Tasty Beef Soup with Steak & Chop Spice
- • 50ml red wine (optional)
- • 30ml oil
- • 500g beef sausages
- • 400ml water
- • 100ml tomato paste
Instructions
- Lightly salt the brinjal and leave to stand for 30 minutes
- Rinse and pat dry with paper towel
- Heat oil and fry onion and brinjal for 10 minutes
- Add sausages and brown lightly
- Mix soup powder, water, red wine and tomato puré and add to the sausages
- Stir to thicken
- Simmer gently for 30 minutes and serve hot
- Serve with creamy mashed potato and a side serving of glazed carrots
